The conference is FREE and open to all UNC students, faculty and staff. Conference space is limited, so please register early.

  • Grilled Garden Vegetable Lasagna (VG) Tender lasagna noodles layered with basil and Ricotta cheese, grilled zucchini, yellow squash, red onion, eggplant, spinach, peppers, and ripe tomato sauce; topped with Mozzarella cheese; garnished with a Parmesan crisp
  • Teriyaki Chicken Salad Boneless breast of chicken is placed in a teriyaki marinade then grilled to perfection. Served on a bed of baby greens with waffle carrots, baby corn, bell peppers, mandarin oranges, water chestnuts, and garnished with sesame seeds; accompanied by toasted sesame vinaigrette and fried wonton crisps
  • High Plains Buffalo Loaf Buffalo seasoned with mild chiles and spices; accompanied by smoked cheddar mashed potatoes, green chile gravy, and garlic vegetables
