Lori Sachau’s professional background includes over 18 years of experience in higher education and 22 years in dietetics related work. She has directed large multi-faceted food service departments at two universities, coordinated vocational education programs for the state of Colorado, and taught undergraduate and graduate level dietetic students.

Before returning to UNC in 2005, Lori worked for a national nonprofit organization as the Director for Nutrition and Outreach. In this position, she worked in the area of nutrition communications and spoke at regional and national level meetings and conferences. She also worked with public policy makers, followed federal nutrition programs, and wrote testimony for Congress.  Currently, Lori is working on completing a Ph.D. in Educational Technology. Her research interests include instructional design in nutrition and dietetic education and electronic learning in computer based environments.

Lori’s diverse background gives her a unique perspective on the food industry, how consumers make food choices, nutrition education, and higher education. She has participated in writing questions for the national Registration Examination for Dietitians. Courses taught at UNC include FND 210 Medical Terminology, FND 342 Food Science, FND 410 Professional Development Seminar, FND 446 Foodservice Systems Management, CH 303 Health Education in the Elementary School, EDEL 460 Integrated Methods I in Health.
