Douglas Marshall, Professor of Public Health and Associate Dean of the College of Natural and Health Sciences at the University of Northern Colorado, has collaborated with 41 scientists from 18 countries to write a book for the World Health Organization and the Food and Agriculture Organization of the United Nations. The book, Exposure Assessment of Microbiological Hazards in Foods: Guidelines, was commissioned due to concern over the worldwide increase in foodborne diseases.
The book presents a holistic approach to food safety with the objectives of producing safer food, reducing the numbers of foodborne illnesses, and facilitating domestic and international trade in food. The guidelines aim to provide a practical framework and approach for undertaking exposure assessment of microbiological hazards (bacteria, fungi, viruses, protozoa, and microbial toxins) in foods. It outlines a structured model where the entire food chain is considered in the production of safe food.
Dr. Marshall has over 230 contributions to the scientific literature, with recent efforts focused on developing methods to rapidly detect and control foodborne pathogens. He is a frequent consultant for the U.S. National Institutes of Health, U.S. Department of Agriculture, U.S. Department of Commerce - National Oceanic Atmospheric Administration, the United Nations Food and Agriculture Organization, and the World Health Organization. He also provides regular consultation on food safety issues to private industry and international governments. He is the recipient of the 2002 International Association for Food Protection Educator Award and the former Contributing Editor of the journal Food Microbiology.
