My name is Nikki Withrow and I am really excited about becoming the new faculty in residence for Harrison Hall. I was born and raised in Indianapolis, Indiana and attended Purdue University as an undergraduate. I moved to Colorado where I earned a Masters in Science with an emphasis in Nutritional studies and then completed a dietetic internship to become a Registered Dietitian. After working in the field as a clinical dietitian and instructor at Metro State University of Denver, I became a nutrition fellow for the Leadership in Education of Neurodevelopmental Disorders (LEND) along with going back to school to earn my PhD in nutritional science. Today, I am an assistant professor in Nutrition and Dietetics and the Dietetic Internship Coordinator here at UNC. On Friday’s, I work with families through the Child Development Unit at the Children’s Hospital to help prevent nutritional risk in children with an Autism Spectrum Disorder.
I love to be outdoors and you will most likely see me riding my bike, jogging or at the rec center when I am not working. I also love being with my family and friends. You may also see me walking my dog, Buddy so please join our walk anytime!
I am looking forward to this opportunity to integrate nutrition and health into Harrison Hall. This is an opportunity for me to enhance your student experience and to assist in student academic goals, classes and support you through the challenges of living in a residential hall.
