Homemade Granola
During the "ESSIG’S SECRETS" presentation at the "It's All About You!" Classified Open Enrollment event held on 5/2/07 at the University Center Ballrooms, Chef Aran prepared healthy, quick, and easy breakfast and lunch items... better than watching Rachel, Paula or Emeril Live! Here are your recipes!
Homemade Granola
Yield: approximately 5 cups
- Rolled Oats (not Instant or Quick Oatmeal): 4 cups
- Pecans, Cashews, or other Nuts: 3/4 cup
- Raisins: 3/4 cup
- Honey (or maple syrup if desired): 1/3 cup
- Vegetable Oil or Sunflower Oil: 1/3 cup
- Water: 2 tablespoons
- Heat oven to 300 degrees.
- Combine the Honey, Oil, and Water.
- Toss the mixture with the Rolled Oats to coat completely.
- Add the Nuts.
- Place the mixture on a baking sheet and bake at 300 degrees for approximately 30 minutes. Stir once during baking.
- Allow to cool and add Raisins.
- Store in an airtight container... enjoy!
Note: You can add other items to this mixture such as Coconut, Dried Fruits, and even Chocolate!! Add these items after the Oats have cooled.
