The best part of my job: The people, time off, and hours in the food industry.

The first job I ever had was: Prep cook, bus-boy, dishwasher on a dinner cruise ship at Navy Pier, Chicago.

The strangest job I’ve ever had was: Catering a wedding in the middle of the forest for the owner of 50 Taco Bells... of course, she had a mini Taco Bell stand at the reception.

If I weren’t in food service: I would be rich and travel.

My refrigerator always contains: Alaskan Salmon.

My favorite meal is: any seafood with a good NY Strip Steak.

The best restaurant I’ve ever eaten at was: Charlie Trotters, Chicago.

People tell me the celebrity I most resemble is: Bill Bellamy (comic/actor).

In my spare time, I like to: hike and fish with my wolf-hybrid.

People are often most surprised to find out that I: have been in this business for 21 years... my first job, never done anything else for money.

The living person I’d most like to have dinner with is: Bobby Flay.

The person from history I’d most like to meet is: Auguste Escoffier (a French chef, restaurateur and culinary writer who popularized and updated traditional French cooking methods).

My favorite movie is: Jumper.

On television I never miss: My Name Is Earl.

My car radio is almost always tuned to: 95.7 FM

I would most like to visit: Russia, Spain, and Germany.
