Seasonal Menus - Summer

The following special offerings are available to events scheduled between May 26th and August 27th. Due to our concern that the products offered at your event are of the highest quality and best value, these items are specially offered during this period and are not available outside these dates. Thank you for allowing UNC Catering to serve your needs.

Hors D'Oeuvres

  • Crawfish Canapé (50 pieces) $88.75
    • crawfish, onion, and bell peppers made up crab cake style then fried to perfection, served on a cornbread base with Remoulade sauce

Signature Dinner Salad

(Add $1.75 to your served Dinner to upgrade your salad.)

  • Marinated Green Bean, Watercress and Radish Salad
    • fresh seasonal green beans and radishes marinated and served on a bed of crisp watercress
  • New Potato and Cucumber Salad with Fresh Mint*
    • a refreshing salad for those hot summer days of tender potatoes, fresh cucumbers and mint in a creamy yogurt dressing

Served Breakfast

  • Red, White, and Blue Parfait with Fresh Fruit and Muffins $7.75
    • vanilla yogurt layered with fresh blueberries, strawberries and house made granola garnished with mint
    • served with: assorted muffins, fresh fruit, chilled orange juice, coffee, hot tea and 2% milk

Served Lunch

  • Grilled Chicken Palliards with Apricot Chutney $9.50
    • served with coconut red curry vegetables and Israeli cous cous
  • Seared Halibut with Pesto Drizzle $8.75
    • served on saffron rice and wilted arugula

Served Dinner

  • Roasted Beef Tenderloin with Sherry Vinaigrette and Watercress $25.50
    • try paring with our seasonal Summer side option roasted yellow potato and Walla Walla onion hash
  • Soy Honey Glazed Broiled Salmon Fillet $23.00
    • try pairing with our seasonal Summer options of wasabi mashed red potatoes and sesame asparagus

Vegetarian Option

  • Marinated Tomato, Mozzarella and Basil with Orzo Pasta Salad $13.25
    • fresh tomatoes marinated lightly in a red wine vinaigrette and layered around an orzo pasta salad with fresh Mozzarella and basil
