Seasonal Menus - Spring

The following special offerings are available to events scheduled between March 31st and May 7th. Due to our concern that the products offered at your event are of the highest quality and best value, these items are specially offered during this period and are not available outside these dates. Thank you for allowing UNC Catering to serve your needs.

Hors D'Oeuvres

  • Smoked Salmon* Croquettes with Red Onion and Tomato Salsa (50 pieces) $82.00
    • Colorado smoked salmon with bell peppers and onions, mixed with a rich cream then lightly breaded and seared to perfection; topped with a smoky red onion and tomato salsa

Signature Dinner Salad

(Add $1.75 to your served Dinner to upgrade your salad.)

  • Marinated Asparagus and Seasonal Mushroom Salad
    • fresh asparagus and a variety of seasonal Mushrooms which may include bolte, morel, crumini and oyster, marinated in a lemon tarragon vinaigrette served over fresh baby spring greens

Served Breakfast

  • Poached Eggs de Cameron $9.75
    • two English muffins toasted and topped with grilled tomato, tender shrimp, and two poached eggs, covered with a citrus Hollandaise sauce
    • served with: assorted muffins, fresh fruit, chilled orange juice, coffee, hot tea and 2% milk

Served Lunch

  • Muscato Poached Pacific Salmon with Tomato Cucumber Salad $10.50
    • wild caught Pacific salmon poached in Muscato wine and other seasonings served with a refreshing salad of marinated cucumbers, tomatoes, and watercress

Served Dinner

  • Roasted Colorado* Lamb Loin with a Sun Dried Cherry Brown Sauce $23.50
    • Locally raised Colorado lamb loin roasted to a medium doneness served with a rich brown sauce enhanced with sundried tart cherries
    • try pairing this entrée with our Spring side options of petite pan squash and chevre potato cakes

Vegetarian Option

  • Somen Noodle Salad with Fried Tofu and Spring Onions $13.25
    • refreshing cold noodle salad with crisp tofu, carrot flowers, spring onions and a sweet soy dressing

Dessert

  • Strawberry Mango Pavlova $4.00
    • crisp meringue shell topped with a dollop of mango custard, fresh sliced strawberries and mangos and topped with whipped cream and strawberry sauce
