The Dining Services Main Office is located on Central Campus in the North wing of Tobey-Kendel Hall, Room 120. Our normal hours of operation are 8:00am - 5:00pm, Monday through Friday. The only time the office is closed is if the University is closed.

I have always been around food, whether it's farming, growing and producing it, cooking or managing it... or just enjoying eating it!
I have been at the University of Northern Colorado for over 25 years. In 1982 when I came to UNC, I started working as a student in Dining Services. I received my Bachelor of Arts degree in Food and Nutrition with emphasis in Food Service Management from UNC in 1987. I currently serve as the Director of Dining Services.
I provide leadership to the Residential Board Plan, which serves around 1 million meals annually in Holmes Dining Hall, Tobey-Kendel Dining Room, the University Center Food Court, and Bears Bistro. We also have multiple Retail Dining operations that are both national and in-house brands, campus snack & beverage vending, athletic & non-athletic Concessions, UNC Catering, and Senior Meals for the Weld County Area Agency on Aging.

"What do you eat at home?" I'm asked that question quite often.
Dining Services also asks our guests the same question. With such a diverse campus population, it is only natural that our menus and food offerings are just as diverse as those that we serve.
I started in restaurants at the age of 14 and have not looked back. I love to work with food, create new dishes, explore new foods and see guests happy. I work with a team of great chefs, cooks, and culinary professionals here at UNC to create menus, recipes, conduct staff trainings and work diligently to ensure customer satisfaction and the safety of the products and services we offer our guests.
I am a graduate of the International School of Culinary Arts in Denver Colorado. Originally from Michigan, I have worked in various restaurants and Country Clubs in Michigan and Colorado. I am an active member and past president of the Colorado Chefs Association, active member of the American Culinary Federation, Certified Culinary Administrator and Certified Executive Chef.
To answer that question of what I eat at home, it is the same as what I eat here at UNC…good food made with care for those it is served to.
Associate Director for Catering, Concessions, and Retail Dining
When I was seven years old and assembling antipasto platters for a family party, my mother commented that I should be a caterer. Those words must have been imbedded in my subconscious. While attending the University of Denver School of Hotel Restaurant Management for my undergraduate degree, I did become a caterer and so much more! I haven’t looked back since!
My early career was spent working for large and small catering companies in Denver. While I continued my professional education at the California Culinary Academy in San Francisco, I catered to make ends meet. A few years later I earned a master’s degree in organizational development.
I come to UNC after 21 years at CU Boulder. I spent most of my career at CU working in the University Memorial Center (the campus’ student union and the State of Colorado’s Official Veteran’s Memorial) serving in a variety of capacities such as the Catering Manager, Retail and Satellite Operations Manager, Production Manager, Executive Chef and the Associate Director. After many years of learning all aspects of management I was fortunate enough to serve as the UMC Food Service Director for almost six years.
I have loved my career working on a university campus. It has been an honor to work with faculty, staff and the community. But, my favorite aspect of being on a campus is working with individual students and student groups. While food is my chosen career, working in student development is an added bonus.
I have been a proud Pioneer, Buffalo, and now a Bear! I look forward to working within the campus community of UNC to provide leadership and great food and service!

As a former UNC student and native of Colorado, I am happy be back after living in the mid-west for the past 25 years. I have a bachelor's degree in Business Administration/ Finance and Dietetics from Minnesota State University-Mankato and am a Registered Dietitian. I was most recently the Associate Director of Dining Services and a leadership instructor for the Continuing Education Institute for St. Norbert College in De Pere, Wisconsin... and yes, I am a Packers fan. I have to be -- I ran their training camp for 13 years!
My passion is working with students and student organizations to promote healthy lifestyle, teaching dining etiquette, and assisting with special events. My current responsibilities as the Assistant Director of Dining Services are to oversee Holmes Dining Hall and Tobey-Kendel Dining Room and ensure the UNC community is receiving the best possible food and customer service. As a Registered Dietitian, I am here to provide nutritional information and to assist students with special dietary needs.
Financial and Budget Analyst
When I started working, I was hired as a waitress in a local restaurant in Iowa. My boss and I soon decided that I would be better suited as a cook... and I have enjoyed cooking ever since. Once out of high school I tried various things, I worked in the medical field and took a Nutrition Class at Luther College during J-term, which I loved. I thought I would pursue those interests, but life had other plans for me.
I moved to Wyoming and worked in the local hospital and the local truck stop. After meeting my future husband, we decided to leave Wyoming for Colorado and moved to Denver. I continued my education at Columbia College, majoring in Business Administration. While there, the college director and my accounting professor encouraged me to pursue accounting, because I was good at it. I had other ideas, so after graduation, I took a job at Alliant Foodservice (now US Foodservice) as a member of the Human Resources Department.
I came to Greeley in 2004 and have spent most of that time at Weld County’s Department of Human Services (fiscal office) in various positions, most recently the Reporting Accounting Supervisor. I moved into budgeting for several grants, including the Weld County Senior Meals program, equaling about 5 million dollars for the past six years. I have loved my career working with numbers and look forward to working on the UNC Dining Services budget.
I am married to Eric, a pilot for Southwest Airlines, we have two children, Allison and Garrett, and two dogs, a Yellow Lab named Tabby Anne, and a Denkai Animal Sanctuary rescue named Duke - we think he's a Chihuahua and Jack Russell mix. In my spare time, I enjoy scrapbooking, gardening, cooking, hunting, camping, and watching the CO Rockies, the Broncos and the UNC Men’s basketball games.
Vending Manager and CBORD FSS Coordinator
I have worked in UNC Dining Services for over 20 years. I am a 1989 graduate of UNC with a BS in Business Administration with an emphasis in Accounting.
I currently coordinate technology needs for Dining Services, as well as CBORD FSS (Food Services Suite -- the system we use that contains all of the food and recipes we prepare).
I am married to Laura, and we have 3 children... Adrianna, Krue, and Kian... and Heidi our Jack Russell Terrier. In my spare time, I enjoy coaching my son Kian's baseball and basketball teams. I also enjoy supporting UNC Athletics. GO BEARS!
I started working part-time as a student here at UNC in McCowen Dining Room. After a couple of semesters, one of the managers figured out I could handle a computer pretty well, so I moved into the Student Secretary position (thanks, Teresa!!). I'm thankful for this change of scenery, because I found out that I truly liked the "behind the scenes" work quite a bit.
After graduating from UNC with a Psychology degree, I couldn't think of a better place to work, so I made UNC and Dining Services my "home away from home." I started my full-time path here at UNC as an Administrative Assistant in the Dining Services main office, and a few years later, I became the only Program Assistant in Dining Services.
Administrative Assistant to the Director
I was raised in Sterling, CO and studied Business Administration in college. I joined the UNC Dining Services team in 2008 as an assistant to the Director, and there has never been a dull moment.
Did you know that Dining Services provides more than 500 jobs to students, administrative, classified, and temporary employees? Last year, we served over one million meals combined in the dining rooms, catered events, retail dining at the University Center and the Weld County Senior Meals program.
One of the best parts of my job is being a member of such a diverse team of culinary and administrative professionals and…we have a lot of fun!
I am a Kansas native, and I moved to Greeley in 2008.
I really love it here in Northern Colorado, especially Greeley. It’s only a short drive to either the mountains or the city, but it still has that rural, small town feel that reminds me of home.
I have worked for UNC Dining Services for over 6 years. I enjoy being a part of a university that is constantly changing, growing, and striving to provide the best for our entire campus community.
I look forward to seeing what the future holds for Greeley and UNC.
Maintenance (aka our "Fix It Guy")
I have been at UNC for over 10 years now. My job in Dining Service covers anything maintenance-related for all of Dining Services... including all of the dining locations, the UC Food Court, Catering, Retail Dining, and Concessions.
I went to University High School here on the UNC campus as well as Aims Community College. I am married to Jan (who also works in Dining Services) and we have 2 kids, Ashlee and Brandon. We're all very excited to have a grandson in our family!!
In my spare time during the summer, I am a Wrangler for the Greeley Stampede -- and have been for over 20 years. I am currently a Trail Boss over the Guest Ranch and Information station. I also enjoy going to the lake and hanging out at the in-law’s pool.

Retail Dining Manager
I have lived in Colorado all my life. In my spare time, I enjoy spending as much time as possible with my wife and five boys. We all enjoy the Colorado Rockies, the Colorado Avalanche, the Denver Nuggets, and the Denver Broncos.
I have been employed in Dining Services for over 6 years, but I have been in the food industry for over 15 years. I owned and operated two restaurants before coming to UNC. The experience I gained from being "the guy where the buck would stop” was immeasurable. Here at UNC Dining Services, we have that same ownership mentality. It is exciting to be a part of a management team that looks to growth to better serve our students.
As the Retail Dining Manager, it is my job to ensure the student's retail dining experience is one that they have grown accustomed to and expect. At the University Center, students have a choice of Bears Mo'Jo Coffee Co, Einstein Bros® Bagels, Munchy Mart, Sushi with Gusto®, Subway®, and 3 Coffee Corners conveniently located across campus.

I have always worked in food service and am very excited to be part of the UNC Dining Services family. I love working with such an interesting, supportive, and diverse group of people.
I also love the opportunity I have to interact and learn from the amazing students that are such a big part of my UNC experience.
I am married, have 3 children, and 5 grandchildren. Being "Nana" is a wonderful stage of life, and I love the "snuggle, hug, spoil, and send back to Mom" job it is!
Retail Dining Assistant Manager
My favorite part about being a Colorado native is the amazing scenery we have here especially the mountains. I love the time I get to spend with my family, especially when we get together for Broncos.
I have been in the QSR industry since 2000. I have gone from being a team member to a store manager and co-owner of a restaurant, to now working here on campus. I started my career in Retail Dining here at UNC in August of 2013.
I am proud to be a BEAR, and I enjoy working with all the different staff and students here.
Retail Dining Assistant Manager
I was born and raised in Colorado, and I am a 2014 UNC graduate with a BS in Recreation, Tourism, & Hospitality.
I started working for Dining Services in 2011 at the campus Subway® where I continued to work throughout my college career. I worked my way up to being the Student Manager of the store, and I am very happy to back with Dining Services in my new position because this is what I love doing.
In my spare time, I enjoy being with my friends and family, traveling as much as I can, and crafting. I enjoy going to concerts and pretty much anything outdoors. I am from the eastern plains of Colorado, so I absolutely love living on the front range and being so close to the mountains.
The most rewarding part of my job is getting the chance to work with students. This department has helped me to grow as a person and manager, and I am excited to be a part of such a great team.
Food Court and Concessions Manager
I began working at UNC Dining Services in August 2006 as the Concessions and Bar Manager. In August 2008, I became the Food Court and Concessions Manager. Not only do we provide Concessions for UNC events, but also for the Colorado community including youth and high school tournaments and activities. This can be very challenging at times... but it's very rewarding at the end of the day.
Since the Fall of 2008, the Food Court has been through many changes to accommodate our students wants and needs. In the Summer of 2013, we had a new salad bar installed to "up the variety" of items we serve. Bears Bistro has also been through many changes. The students asked and we listened. New for the Academic Year 2014-2015, we will have Bears Bistro open Monday through Thursday from 10:30am to 9:00pm and Fridays from 10:30am – 3:00pm. We are looking forward to meeting the student’s needs for a meal plan option during the times when the dining halls are closed.
I have been married to my husband Lee for 27 years, and we have two children: daughter Ashlee (grandson Silas) and son Brandon. As a family, we enjoy spending time together... especially in the summer when we can go boating and jet skiing at the lake or just hanging out at my sister's swimming pool. And of course we enjoy spending a lot of time with our old grandson, Silas. In my spare time, I enjoy volunteering for the Greeley Independent Stampede Wranglers; I have been an active member for the past 19 years.
I am thrilled to be joining the catering team at the University of Northern Colorado, and proud to be a Bear. I was raised in Manhattan, Kansas and developed a love of food with lots of homemade meals.
I attended Hutchinson Community College on a football scholarship and received an Associate’s degree in Business. I then completed a Bachelor of Science degree in Business Administration at Kansas State University and moved to Colorado. I have been married to my amazing wife, a middle school teacher, for 18 years. We have four incredible and beautiful daughters. In my free time I enjoy skiing, golfing, and other outdoor activities with my family in colorful Colorado.
I have been in the food service industry for most of my life, starting at an early age as a dishwasher. The privilege of working with young adults always keeps me motivated to provide the best experience possible for guests who are joining us for their special occasions and events.
Catering Assistant Manager
Being a Colorado native, I love all the opportunities I have in this beautiful state. With my job here in the catering department, I get to work a wide variety of events, like weddings, the wild animal sanctuary, miscellaneous events around campus, and other venues throughout the state. It gives me more appreciation for my home. I feel Colorado is such a special place to live.
I have worked for UNC Catering for two years. I started as a university aide and worked up to my current position, which is the assistant catering manager. Having a job at a university is like no other job I’ve had. I love working with the students, and I love the environment and pace of my job, as well as the wonderful staff I work with. I stay busy and I get to meet new people daily.
In my free time I spend as much time with my three year old daughter, Julia, 6 month old son, Ezra, and my husband, Andy, as I can squeeze in. I enjoy going to Rockies games, playing volleyball and basketball, having time with family and friends, bike rides, spoiling my kids, and cooking.
Catering Assistant Manager
I am not a Colorado native, but close to it. I moved to Colorado at two years old and have grown up here. I moved to Greeley in 2013 with my son. He is in second grade, is full of energy, and he loves his sports! I have two rescue dogs that are full of energy and are big lovers. I am engaged to a great guy who grew up in Greeley so I am always learning new things about the city.
I love that Greeley is so close to places like Estes Park, but not too far away from where I grew up and the rest of my family down in Denver.
I went to college at Metropolitan State College of Denver and the Art Institute of Colorado for culinary arts. I have been in food service, retail management, and also have had a couple great office jobs.
I started working with UNC Catering in August of 2015. I love working for UNC Catering because it is fun and keeps me on my toes. Working with the staff in dining is a privilege and getting to work with new students every semester is a wonderful learning experience. I am thankful to be a part of this amazing university and being able to provide fantastic food to everyone!

I have been in the culinary entertainment field for 30+ years. I have worked in various restaurants in the Denver area, and I’ve been with UNC Catering for 6 years. I’m a Colorado native, and I love the diverse cuisine we have here... especially wild game.
I have the honor to work with some really talented chefs, cooks and culinary professionals here at UNC to provide excellent quality and safe product to our customers.
I am an Accounting Technician for Dining Services at the University Center. I have an AAS degree in Accounting from Aims Community College and a BS in Business Administration from UNC.
I worked in the grocery retail business for close to 25 years before I started working at UNC. I love meeting and interacting with our students, faculty, staff!
I have lived in Colorado for most of my life. I have also lived in Montana and Arkansas. I have one son who is currently attending UNC. He is a 3rd generation Bear, of which I am SUPER proud of.
In my free time, I enjoy traveling and spending time with my friends and family. I love to attend UNC sporting events and activities. I am a Denver Broncos season ticket holder, so I especially enjoy attending Broncos games! I am a member of the UNC Dining Services Relay for Life team and participate in the Women’s Walk, which raises funds for women’s athletic scholarships.

HOLMES DINING HALL
Holmes Dining Hall is located on West Campus, south of Turner and Lawrenson Halls - and north of the very large parking lot.
I starting working in Dining Services 35+ years ago as a student cashier at the University Center cafeteria and loved the opportunities that kept coming my way. I moved on to full-time status as a Supervisor and then as Catering Manager for 15 years. For the past 15+ years, I have managed both Tobey-Kendel Dining Room and Holmes Dining Hall. I truly cannot choose which operation I like better -- Catering or the Dining Rooms -- as they have similarities that make me passionate – people, good food, and a feeling of accomplishment.
Dining Services has changed a lot over the last 31 years, and the changes have been awesome... better food, modern establishments, endless offerings, and more opportunities coming my way - I can’t wait for the next 31 years!

My life has been a journey of varied experiences that have tested and tried me, as well as, invigorated and inspired me. I choose a positive and confident approach to life knowing that I am willing to try most anything and do my very best.
I am enjoying working with UNC Dining Services because of the privilege I have to work and connect with students whether they are employees or customers. Making myself available to serve and support all of the students in the capacity needed, allows me to find purpose and gratification in all that I do.
I graduated from CSU with a degree in Landscape Design and was fortunate to work with a local Landscape Architect on several Greeley Community projects before choosing to stay home and raise a family. I am married to a wonderful, hard-working man that I met in high school and we have raised five lively children on a farm outside of Greeley. I love to spend time gardening, reading, crafting and enjoying making memories with my family!
I was born in Omaha, Nebraska. My family moved to Aurora, Colorado in 1996 -- the year the Avalanche won the Stanley Cup. I moved to Greeley as a Communications undergrad here at the University of Northern Colorado in 2004.
UNC is where I met my wife Darci. When we first met, we were brought together by food. Myself coming from South Omaha and its meat markets and eastern European cuisine... and Darci coming from Hawaii with its cultural grinds and Asian influences.
We continued to pursue our respective degrees with an emphasis in food service. This was initially promoted to the campus community through the cooking club we started as students, Cultural Culinary Creations. We gathered together as college students and cooked a different cultural cuisine at every club meeting. My interest in cultural foods and trying new things, lead me to a career in food service.
Outside of my Communications internship with Dining Services at UNC in the spring of 2009, followed by my internship with Shamrock Foods distribution, my professional food career began. I worked with Shamrock foods as an Account Executive for a little over two years. Followed by several years working in the industry as a kitchen manager and chef for customers I had serviced as a sales rep.
In 2012 I found myself back at UNC in Dining Services as an entry level display cook at Holmes Dining Hall. This was just before the birth of our daughter Yani. I wanted a job that was consistent and gave me a great platform to steadily progress as a chef. In the fall of 2015, I was given my current opportunity to lead Holmes in the Unit Chef capacity. I did not hesitate accepting this newly slated challenge. My passion for food, collaborating interdepartmentally, and the potential for professional growth as a Unit Chef is endless. I will continue to make the dining experience a memorable one for UNC’s students, faculty, and staff.
Student Personnel Supervisor
I joined UNC over 6 years ago.
I obtained a BA in Restaurant and Hotel Management from Metropolitan State College of Denver and am currently enrolled as a Graduate student in the Higher Education and Student Affairs Leadership Program.
Working at UNC is one of many blessings in my life because I get to work with those who are becoming our future leaders.
It is special to see the students grow and change within their four years at UNC. To be a part of this, never grows old... even though I will!
I grew up in Colorado and have always found my way back. I have lived and traveled much of the United States due to the fortunate experience I have had while playing baseball in college and then at the professional level for a couple of years. I have also gotten the opportunity to travel the world while serving onboard the USS Enterprise (CVN 65).
I have been working at Holmes Dining Hall since 2010. I started as a General Laborer, moved up to a Material Handler, and I am currently the Production Manager. This position is exciting, challenging, and a learning experience. The Production Manager orders almost everything there is that the dining hall needs while also being the morning Manager. I enjoy working here because it keeps me young and in touch with the younger generation while working in a diverse environment.
I have a fantastic wife and seven children that includes three of my own and four step children. They are all in college or on their own path in life now. It is fun, and nerve-racking at times, watching their journey. I enjoy hunting and camping with my family in my free time.

Interim Unit Manager
I was born and raised on Oahu, Hawai’i and came to UNC to pursue a bachelors degree in Chemistry (which I have now). I am currently pursing a degree in Dietetics where my career in Dining Services has helped me discover my passion for food.
As a freshman here at UNC, I began working at Holmes Dining Hall, where I later became a student supervisor. After 4 years as a student in Dining Services, I was promoted and am now the Student Personnel Supervisor at Tobey-Kendel Dining Room. I am responsible for hiring and training the students and our "front of house" staff as well as meal shift supervision.
When I have free time away from work, I enjoy spending it with my friends, watching movies, or sleeping!
I was born in Greeley, Colorado and my father was a professor at UNC at the time. Several years later we moved to Sterling where I grew up.
I started working in restaurants at a very young age and fell in love with the fast pace. It has always been my calling and my life.
I moved to Denver to go to the Colorado Institute of Art and I graduated in Graphic Design. While attending college, I worked full time as a kitchen manager at a very busy restaurant and after graduating I decided I wanted to pursue a culinary career instead.
Over the years, I have done just about everything in the restaurant from washing dishes, line cook, kitchen manager, ordering, chef, general manager, server, bartending and owner. Cooking and creating different dishes has always been my passion. I met my wife in a restaurant and we decided to move to a smaller town to raise her two boys and we ended up back in Greeley.
I have been in the business now, for 42 years and love working at UNC where I learn something new every day. The team of cooks, chefs and managers work hard to provide a variety of quality menu items and great customer service to the students, faculty and staff.
I attended San Jose State University and moved to northern Colorado in the fall of 2000.
I began working in Dining Services at UNC in November 2008 and truly enjoy being here!
Among many things, I volunteer for St. Mary Catholic Church in Ault, the High Plains Library District, Eaton High School, and my local Rotary club.
Enjoying life along the way with my husband and son is something that I truly value.
Student Personnel Supervisor
I am a 2011 graduate of UNC with a degree in History and a minor in Geography. I worked as a student at Holmes Dining Hall before I graduated and was lucky enough to find a job opening here a few months after I finished my degree. I now work at Tobey-Kendel Dining Room... same job, different building.
Working for Dining Services has been great experience; I met my best friend / wife through Dining Services. She and I live in Evans with our dog Vera, our cat Jackson, and we’re expecting a child in August of 2016. I'm a Colorado native, but I've been to or through 38 states and 12 countries. Growing up in Boulder, Colorado made Greeley a bit of a culture shock, but I love it here and enjoy our campus.
Here at TK, I am in charge of the student employees. I am responsible for hiring and training the students and our "front of house" staff -- as well as meal shift supervision. If you see me around, by all means say hello. I'm a fairly outgoing person, who enjoys video games, comic book movies and science fiction.
I consider myself blessed to have worked over 25 years at UNC in a variety of capacities. Every day is a new, fresh, and exciting opportunity to work with great people, great food, and great services.
My job is to keep our coolers, freezers, and storerooms fully stocked so that our staff can create some of the best food to be found on any campus in the country! On occasion, I assist groups or individuals to provide BBQs, picnic meals, or special meal requests.
By far, the most enjoyable part of my job is the daily interaction with people of all ages who truly appreciate our efforts.
I enjoy spending my free time with family and friends, volunteering with several local organizations, and reading the occasional mysteries adventure book.
